One of the promising types vegetable raw materials in Ukraine, which can be used for development resource-saving technologies, are oils. The products their processing serve as obtaining surface-active substances, production food additives, pharmaceutical products, detergents and cosmetics, biofuels additives. most common oil Ukraine is sunflower, which, like other oils, processed to form fatty acids salts. initial process hydrolysis. technological parameters sunflower hydrolysis under different conditions were studied.
